HEAD CHEF – School Dining Hall/term time The Academy Dollar Academy is recognised as one of the best independent schools in Scotland. Our beautiful campus boasts excellent facilities, and our standards and expectations in all areas are high. We have a community of more than 1,100 day pupils, 80 boarding pupils, and a staff of 240. The Post We are looking for a qualified, experienced chef with creative flair and excellent management skills who can lead effectively and ensure that the school’s high standards are maintained. We provide breakfast for boarders, lunch for pupils and staff every weekday, and dinner for boarders. Our aim is to deliver healthy, balanced meals, which are interesting, varied and innovative. The Academy also hosts a variety of meetings, events, sporting fixtures and functions throughout the academic year where a very high standard of catering is expected. The Head Chef reports to the Catering Manager and Assistant Catering Manager, and in addition to the Head Chef our team comprises a Second Chef, a Senior Chef, a Senior Chef/Weekend, a Breakfast Chef and a number of Food Service Assistants. The successful candidate will be expected to demonstrate an enthusiasm for providing healthy, high quality food with excellent presentation, for the school dining hall, and for on-site functions and banquets, as required. Knowledge, Skills and Experience Applicants should, ideally, be fully qualified to SVQ Level 3 (or city and Guilds level 2). Substantial experience working within a busy kitchen environment in a supervisory kitchen role is essential, and applicants must hold a current Intermediate level food hygiene certificate. Excellent interpersonal skills are fundamental and you must be able to work harmoniously as part of a team and be helpful and polite when dealing with pupils, staff and visitors. An understanding of budgetary control is essential. Main Duties and Responsibilities • Manage and work with the kitchen team to produce high quality food on a daily basis; • Create diverse, interesting menus befitting a modern and forward-looking school environment; • Oversee and monitor the work of the kitchen staff to ensure all tasks are effectively completed; • Comply with nutrition and hygiene regulations and safety standards; • Foster a climate of cooperation and respect and ensure any staffing issues are resolved fairly and quickly in conjunction with the Catering Manager; • Manage orders, stock control and associated paperwork; • Oversee the security of kitchen stores; • Be prepared to be available for functions, as they arise; • Manage staff resources and create rotas for cooks and general assistants; • Provide feedback on performance to the Catering Manager in relation to staff development; • Carry out any reasonable request made by the Catering Manager, Rector, Bursar or their staff; • Develop staff technical and culinary abilities. Salary The salary will be based on the Scottish Joint Council for Local Government Officers pay scales and details are available on application. Hours Normal hours are 37.5 per week, Monday to Friday, from 6.30am to 2.30pm with 30 minutes for lunch. Pension Our support staff are automatically enrolled in the Local Government Superannuation Scheme, to which the Governors contribute the statutory level of Employer’s Contributions. Holidays This is a term time position and school holidays apply. School Fees Employees whose children attend the Academy are eligible for fee remission, and details will be made available to the successful candidate.
