Job description:

Cullen bay hotel are seeking a dynamic career focused head chef to take charge of a very busy kitchen.

The ideal candidate should have at least one years experience in a similar role however we would consider a committed talented sous chef.

Cullen has good amenities such as golfing and fishing and will suit a chef who likes the outdoors.

The emphasis of the kitchen is to prepare fresh local produce to order and it can be very demanding at times.
As well as implementing new menus, ordering stock and maintaining profit margins the successful candidate will also be responsible for the supervision all other kitchen staff.

Reporting directly to the General Manager the rota of work will be 5 days from 7 with 2 days off each week.

Job Purpose
To manage a busy kitchen and staff whilst working under pressure whilst remaining calm and focused on customer experience and satisfaction

Duties and Responsibilities
• Construct menus with existing and new culinary creations ensuring the quality, variety, and quantity of servings are optimising local seasonal produce to achieve profit margins
• Producing menus for functions in house and off site within budgets provided
• Overseeing staff to ensure attention to detail, quality and consistency of dishes served achieve the required standards set
• Manage staff and ensure stock control and waste management are minimised, recorded and controlled efficiently
• To ensure all food and processes are compliant with in house HACCP and are fully compliant with food safety legislation
• A degree of flexibility to capture seasonal requirements
• Work with GM to coordinate functions in excess of 120 covers on or off site
• Work with GM to identify weaknesses in staff and develop and improve on performance
• Report and initiate resolutions to issues with stock or equipment which may affect service

Qualifications
Minimum of 1 year in a similar position
Food Safety Level 3
Management training
