Salary:Up to £38,000 paid weekly plus tips and a performance related bonus of 10% paid 6 monthly. You will also get meals on duty and discounted food in the hotels outlets off duty
Days:5 days a week
Holidays:Statutory (28 days p/a)
Covers:Lunch: up to 300; Dinner: Up to 220; Breakfast: Up to 250; Functions: Up to 170
Food type:Traditional Scottish A la carte and Table D'hote menu
Full-time chefs:7 chefs plus 3 Kitchen Porters
Accommodation:Own room in the hotel available long term if required
Job description:

I am looking for head chef candidates for a busy hotel situated 25 miles north of Perth.

The hotel has two restaurants and two bars, one a public bar and one a residents bar. There is also a Lounge and a room service menu which is operated 24 hours per day.

The food operation is a busy one with breakfast for up to 300 covers and at dinner 220 covers, whilst running the all day bar menu for around 100 covers.

I am looking for an experienced head chef that can balance an exceptional guest experience with an eye on cost, delivering this in a clean and safe environment.

The Role
- Planning and overseeing food preparation and service
- Menu planning, use purchasing systems to leverage the optimum cost benefit
- Team leadership and management including training, rotas and performance development
- Profitability, including using Procure Wizard and PSL, menu development including pricing and costing, ordering, stock management and GP control
- Ensure that the HACCP systems are correctly implemented and adhered to and all aspects of health and safety are given priority
- You will develop the entire food operation, this is a senior management position and you will be required to attend business meetings.

- Previous experience as a head chef in a similar environment
- Attention to detail
- Demonstrates the ability to recruit, train and develop the team
- Have working knowledge of current Environmental Health, safety and HACCP legislation and ideally have an advanced food hygiene certificate
- Have a good understanding of Kitchen P&L’s, costing and wage control
- You will have a good work ethic
- Work as part of the hotel management team and forge good working relationships with internal and external colleagues.
