This section of the Chefs In Scotland website has been set up to help budding
and established pastry chefs of all levels to register and in turn be privy to
the latest available Scottish jobs.

My name is Nigel Gray. The name IRONSIDE pays homage to Mr Ian Ironside. Ian was my pastry chef when I first started out in Hotels back in 1989 at Gleneagles and without his discipline, guidance and belief in me it would not have been possible for me and others to have achieved some of the things which we have. I miss very much not being able to call him, his knowledge truly was second to none.

One of his passions was that scottish lads and lassies should do well, so it seemed appropriate to remember him here in this way. If anyone has in the past had the privilege of working alongside the legend that is Ironside then perhaps you would like to sign Mike's guest book with your thoughts or comments....
