I didn’t know that Chef Alan Gibb was a relatively young man or that he was born in Aberdeen.

Alan registered with CIS when he finished at The Cluny in Forres back in the mid noughties. He was of a mind to do a bit of relief work, but picked up a head chef position at the City Inn in Glasgow before making his way back to Gleneagles.

Over the following years, we occasionally sent out via email to him for work references. Without fail, he would take the time to fill in the work reference answering honestly and send them back to us. I am sure we were one of many such requests that he would deal with in a busy day.

I still remember the name of the first chef we placed at Gleneagles, Rosemary Phelan, this would be back in 2000 or 2001 and when the ladies from HR at Gleneagles phoned me up, sitting in my back room in Glenmore on Skye, I was astounded that I was thought worthy of trying to find them chefs. The check stub was pinned up on the wall. We placed a few chefs at Gleneagles at that time.

Ten or so years later and we weren’t dealing with Gleneagles but a good young chef from Stranraer, Ryan McCutcheon, registered with CIS and I did up his CV and popped it over to Chef Gibb.

The HR department queried our 200 pound plus VAT fee. I emailed Chef Gibb and said it is ok, just leave the fee. He said no, if HR wouldn’t pay it, it would come out of his kitchen budget. HR paid the fee.

Out and about in Scotland England and Wales

Thursday 23rd June

As it stood we have over 60 chefs out working all over the UK.

Relief work remains busy as expected for this time of year.

In Wales we have had Al Manini working as well as Mark Belligham, Stuart Agnew will be moving from Cornwall to Wales, also we have Grant Buchanan in Cumbria at the Dovenby Hotel.

In Scotland Michael Njoroge at The Eden Court Theatre, Andras Rethi at The Old Manor along with Douglas ‘Denzil’ Gillies, Lillian Clarkson was over in Braemar and the Braemar Lodge and currently at The Nethy Bridge Hotel, David Ironside is working close to home at The Drovers Inn in Memus, Stuart MacColl finished his stint at The Nethy Bridge Hotel and is currently at Ardvasar Hotel with Calvin Jeff, Stuart Palmer was working a second stint at Loch Melfort, Steve Moffat also working in his home town at the Black Bull Hotel Lauder, Alan Baird was over in Stornoway the County Hotel where he will be going again after finishing at The Northern Hotel, Graeme Kennedy has been over at The Lodge at Carfraemill in the Borders, Richard Booth has been working weekends at the Gathering Place Bistro in Braemar and also working at The Cromdale Outdoor Centre near Grantown on Spey, Chris Roberti was over at The Hotel Hebrides and is now back at The Oban Caledonian Hotel, David Errington also help out for a couple of weeks at The Loch Melfort Hotel, Jason Paxton and Sarah Pozzi are working up on Skye at the Duisdale Hotel, Lisca Cample got on very well at Spean Bridge Hotel, Donald Haughey was at The Oban Caledonian and is now working at The Isles of Glencoe Hotel, Lewis Thomson finished a long stint at Fonab and is currently in Lockerbie at The Dryfesdale hotel, Philippe Alamichel was over in Inverness-shire at the Dores Inn then to The Clachan Inn in Drymen and is now going back to Knockomie House Hotel in Forres, Sebastian Luszczynski is at The Alexandr Hotel in Fort William.

There are lots more chefs out working and doing a great job.

Michael George is working at The Station Hotel in Dumfries after doing a long part time stint a Pebbles Spa, Johan Sikkema is coming to an end at The Culloden house Hotel, David Ironside was back over in Arran at The Kinloch Hotel and is now at The Drovers Inn in Memus, Stephen Kessell is still at The Station Hotel in Speyside, Ally Bell is at The Wheatsheaf in Swinton, Stuart Palmer getting excellent feedback from Loch Melfort Hotel, Pawel Halicki is still at Rowardennan Hotel, Roger Brown finished at the Isles of Glencoe and is back at The Queens Hotel Oban, Dmitrij Cvilij is coming to an end at The Torrison Inn, Vytis Baltrunas completed his stint at Eden Court Theatre and is back working at The Creggans Inn, Andrew Stott is loving life in the Highlands at Borgie Lodge, Ionel Rizea got on excellent at The Drovers Inn in Memus, Lillian Clarkson was working close to home at The Ballachulish Hotel, Kirsty Hamilton getting on extremely well in all jobs so far Drovers Inn and Tiroran House.

Out and About 12th May

Sebastien Schoeder who has been known to CIS for over 15 years is currently working a relief sous chef at Kastille Hotel in Turriff, CIS was represented at his wedding.

Stuart MacColl known to CIS for around 10 years and this year has been to Fordie Estate, Bunrannoch House, Auchrannie, Moreig Hotel, Cuilfail Hotel, Ardlui and currently working at Tormaukin he has also got booking for December and August 2017.

David Ironside will be moving house in the next week or so we have also met David, David has been kept busy most of this year working out at Lythe Care Home, The Cairndale Hotel, Tiroran, Glencairn Care Home and Kirkcudbright Bay Hotel.

Phil Smith who is a long standing relief chef who comes every year to CIS golf completion, Phil is currently in to his 3rd week at Langass Lodge in Uist in the Outer Hebries before that he worked for 4 weeks at The Tufted Duck in Fraserburgh.

Graham Smith has been known to CIS for around 10 years and who we have met he also came to CIS golf completion both in Skye and Moffat he is a month in to Y Note bar and grill staying until the end of May.

Alan MacPherson is another long standing relief chef who still enjoys coming to CIS golf competition he was working at The Pierhouse hotel for around 7 months, went back to help out at Loch Insh Watersports for 4 weeks and finishing up at Knockomie House.

A new relief chef to join CIS this year is Andras Rethi who came to meet us in February this year has been kept busy he work for around 8 weeks at the Links Hotel in Montrose, the Dryfesdale hotel for 5 days and 2 weeks spent at The Tufted Duck and is currently at the old manor who have extended his stay.

Pawel Cimek who is very well known to CIS he has moved down to Edinburgh with his family and we got him out to the Scores Hotel and he worked for around 3 months and then has been at Burts Hotel in the Borders where he has been for a 1 month.

There are lots of other placements out and about on relief and thanks for working hard and representing CIS to a high standard.
