Job description:

This is a small but very well-known hotel and restaurant set in a landscape of sea, mountains and islands on the far North-West coast of Scotland. Guests visit the hotel to enjoy the landscape, the tranquillity and - very importantly - the food.

New Owners have made significant investments in the kitchen and the team within which is reflected in a reputation for first-class cuisine that is heavily influenced by the coastal surroundings. This is an on-going “journey” which will position the hotel and restaurant as a “must visit” when making a culinary tour of the Scottish Highlands & Islands.

The Head Chef will enjoy considerable autonomy in the kitchen – leading a team of three other talented chefs that are totally focused on the preparation of up to 50 high quality covers per night plus modest lunch trade. Responsibilities include the creation of menus (changing monthly with strong seasonal focus), development of the team, operational efficiency and compliance with all health and safety regulations. He or she will attend regular meetings with the Owner and General Manager to gauge progress made on “the journey”.

The 2020 season is likely to run from mid-March until mid-November 2020.

This role is likely to suit an existing Head Chef or a capable and ambitions Sous-Chef that is currently working in a restaurant with a Michelin Star or 3 AA Rosettes.

You would also need to be present in the UK prior to your application as a visit to the hotel is likely to be required.

In line with the requirements of the Immigration Act 2016, all applicants must either be eligible to live and work in the UK or must obtain permits to work in the UK prior to application. Documented evidence of eligibility will be required from candidates as part of the recruitment process.
