Salary:£23,000 negotiable depending on experience plus service charge which equate to about £3000 a year
Duration:Permanent
Hours:Annualised contract at 40 hours per week
Days:5 days a week
Holidays:Statutory (28 days p/a)
Bedrooms:20 in the castle plus luxury lodges
Covers:Lunch: up to 80 in season; Dinner: up to 60 in high season; Breakfast: up to 80 in season; Functions: Up to 150
Food type:high-end fine dining plus bistro using fresh, local produce
Full-time chefs:15 plus kitchen porters
Accommodation:Own room in very nice staff lodge charged at £49 per week
Job description:

Skibo Castle exclusive members club situated in the stunning Scottish highlands but only a 1 hour drive from Inverness.

We are recruiting a senior chef de partie/ junior sous to work alongside our experienced team. This is an excellent opportunity for someone to progress in their career and develop themselves.

There is the possibility of stages and temporary placements at some of the best hotels in the UK when the estate is closed in January.

Beautiful location working with lots of fresh, local produce including strawberries, raspberries and plenty of interesting crops from our established market garden.

Looking for someone with some good quality experience who can work in different corners of the kitchen. You will be working with excellent quality produce including fresh lobsters, scallops and crabs as well as local venison and beef.

There is a partly open kitchen so it is essential that you are presentable.

You will ideally be able to manage a small team as required in the head chef and sous chefs absence.
