Salary:Salary: £18,252 including healthcare and pension. Wage will be reviewed in April.

Job description:

The Crichton Trust is seeking to recruit an experienced and enthusiastic Chef de Partie, with a passion for food to join our team working within the premises of our Restaurant and Conference centre. You would produce a wide range of culinary dishes to parties from 2 to 300 guests. You must be reliable and a great communicator.

Main Duties:

1 Effectively manage the relevant section and ensure it operates in the best productive manner.
2 To organise the preparation and presentation of all menu items to ensure that a high standard is met, and service is prompt and efficient.
3 To ensure correct storage of foodstuff and ensure proper stock rotation, ensuring all food is labelled clearly and correctly and complies with any food control and issuing systems.
4 To receive goods ordered and check for any discrepancies and/or to the standard and quality required. To inform the Head Chef of any discrepancies or items unavailable for service and to inform ‘front of house’ of any unavailable items for service.
5 To inform of any ingredient shortages and disposables required to have a smooth operation.
6 To minimise wastage of foodstuffs and maintain portion control in order to achieve the food gross profit.
7 To train and develop any Commis Chef or Kitchen Porter assigned to the kitchen in accordance with all current Health and Safety and Hygiene legislation.
8 To assist the Chef in maintaining strict Gross Profit and content as necessary to suit customer requirements.
9 To ensure that excellent cleanliness is maintained throughout kitchen areas as per cleaning schedules and current legislative requirements.
10 To ensure that any Commis Chef or Kitchen Porters working in the kitchen are aware of the safety risks and comply with all restaurant and company procedures.
11 To assist as required in ‘service’ areas i.e. Buffets, demonstrations etc.
12 To ensure you comply with all relevant Health and Safety legislation requirements and comply with all restaurant and company rules, regulation and policies. These tasks are not intended to be exhaustive but simply highlight a number of major tasks of the post. The post holder may be required to undertake additional duties which might reasonably be expected and which form part of the function of the post

Person Specification

1. At least two years experience in a similar operation
2. Possess an NVQ Level 2/3 or equivalent
3. Proven organisation ability
4. Able to multi task and work under pressure
