Salary:Competitive salary dependant on skills, qualifications and experience paid monthly overtime for extra days worked

Days:5 from 7 mixed shifts
Holidays:30 days per annum

Covers:Lunch: 30 - 40 plus business conferences buffet style; Dinner: up to 100 split betwen 2AA Rosette restaurant, brasserie and bar; Breakfast: buffet style; Functions: busy wedding function up to 200
Food type:2 AA Restaurant classic British and European using modern techniques, good bar meal trade and very busy functions.
Full-time chefs:12 plus kitchen porters.

Job description:

Gretna Green Hotels

We are currently looking for a new Commis Chef to join our fabulous Hotels team, here at Gretna Green.

Main Duties:

Communicating with the kitchen team in the smooth running of the kitchen helping to ensure that the guests have a memorable experience
Supporting the chefs in the running of the sections in the kitchen by preparing dishes, basic cookery, breakfast service, and presenting food and working alongside the team while on shift.
Under the direction of the senior chefs, learn and record new recipes from the company / other members of the team.
Use the systems in place to support and aid the company’s productivity in stock control, ordering, portion control, menu engineering managing wastage etc to maximise profitability.
Understand and follow the company’s Health and Safety systems to keep everyone safe.
Maintain a high standard of service
To report any shortcomings to the senior chef on duty.
Help to maintain a climate of smooth and friendly cooperation with all departments within the business.
You will need:

City & Guilds 706/1-2 (Basic Cookery/ Advanced Cookery Skills) - or working towards.
Basic food hygiene certificate
Good communications skills
Ability to work using own initiative.
Flexibility across the department and to work split shifts and weekends
Previous experience within kitchen environment – desired.
