Job description:

The Golf View Hotel in Nairn is a 38 bedroom 4 star 1AA Rosette Hotel.

A rare opportunity has arisen for the right candidate to join our kitchen brigade as a Commis Chef, where you will be cooking, preparing and presenting our dishes to the high standards our guests expect. As commis chef, you will receive training in the preparation of a wide range of dishes, allowing you to develop your culinary skills within this high quality environment.

Candidate Attributes:
Previous experience as a Cmmis Chef preferred
Exceptional attention to detail and organisation skills
Highly motivated and hardworking with a can-do attitude; willing to learn new skills and develop your knowledge
Determination to succeed
Passion and flair for food preparation, presentation and for local and seasonal menu content
Can-do attitude with the ability to work as part of a small team as well as on your own initiative
Flexible to work a variety of shifts – 5 days from 7 including bank holidays and weekends
Good common sense and a mature attitude to work

Candidate Responsibilities:
Food preparation and understanding of current food and hygiene legislation
Preparing, cooking and presenting menu items
Following recipes and maintaining the food costs set by Head Chef at all times
Monitoring portion control and wastage
Liaising with senior chefs to complete daily tasks and advise of stock requirements for your section
Maintaining and developing our standards
Working alongside the senior team to develop your culinary skills and knowledge
Provide a friendly, courteous and professional attitude at all times
Ensure legal compliance with Food Hygiene and Safety, policies, procedures, standards and guidelines
Ensure your designated section is prepared and ready prior to each service
Keep all work areas clean and tidy at all times

Relevant Qualifications:
You will be qualified to Intermediate Food Hygiene level (REHIS or similar); understanding of HACCP would be an advantage, as would City and Guilds 706/1 and 706/2 or equivalent.
