Salary:HOURS & SALARY: Salary between £30-£35K annualised as described above. We want this to be a permanent long term appointment for the right person.
Duration:Permanent
Hours:up to 48, overtime in lieu or paid at the end of the season
Days:TYPICAL SUMMER WEEK: in the busy season you’d work 6 days, usually 12:00 to 21:30 - however flexibility is vital
Holidays:Statutory (28 days p/a)
Bedrooms:20 rooms (can sleep up to 70 including dorm rooms)
Covers:Lunch: 30 - 50; Dinner: 80 - 125 - staff food for up to 30 staff; Breakfast: 30 - 70
Food type:Scottish, good vegan and vegetarian menu, seafood, local produce
Full-time chefs:Head chef, sous chef, 2 junior chefs, breakfast/day chef plus kitchen porter and 2 kitchen assistants (smaller team in quieter months)
Accommodation:Room in staff house in Inverarish Village or a single wooden cabin on site if you prefer - part of package

JOB DESCRIPTION:

We are currently looking for a seasoned Head Chef or someone with ambition, creativity, 3+ years experience as a Sous Chef and who has demonstrated an ability to cover busy services on their previous head chefs days off. Someone who has been trained to manage all aspects of running the kitchen and who has the ambition, knowledge and creativity to take the next step in their career. Raasay House Hotel boasts a diverse clientele which requires someone with the knowledge and flexibility to deliver the best culinary experience to all of our guests. Ranging from seasonal specials to core menu items and multiple serving periods the desired candidate should possess the capability to organise and provide for groups and events as well as day to day service.

It’s a long term position for the right candidate with the potential for winters off with pay!

Our business is a seasonal one and we work very hard in the 7 month season that we are fully open but in the winter we work less hours and we enjoy downtime around prepping and planning for the next year.

For example your contracted hours per year could be 1920 hours per year (this is 40 per week).

In the season, which for us is from April to the end of October, you might work between 50 and 60 hours per week but in the winter you might end up with the best part of 4 months off while being paid your monthly salary. Sounds pretty good doesn't it?

How does it work?

Depending on how much holiday you have used in the season you might not have any hours to work in that 4 month gap or you might have a few days of work which might be done while physically here on Raasay, or there’s no reason it couldn’t be done remotely.

In fact there’s nothing to stop you travelling all the winter or pursuing other interests while doing a couple of days work here and there to help get on track for the following season. Meanwhile, you know that you have the stability of a pay cheque every month and year round staff accommodation.

CLIMAVORE
Raasay House is a committed supporter of the CLIMAVORE project, which explores how we eat as climate changes. As part of the Head Chef role we are offering an exciting opportunity and an additional one month salary to work with the CLIMAVORE team, to discover and create a new menu for Raasay House that proactively responds to the climate emergency.
