Globally recognised, we are one of the largest and most successful Visitor Attractions in the Scottish Highlands, and operate 11 months of the year. We welcome approximately 700,000 visitors per annum, from every corner of the world. JOB OVERVIEW We are seeking a talented and experienced Head Chef to lead our team at Eilean Donan Castle. The ideal candidate will possess a strong background in high volume hospitality, with a passion for Scottish cuisine, food preparation and kitchen management. As the Head Chef, you will be responsible for overseeing all aspects of kitchen operations, in two different outlets, ensuring the highest standards of food safety and quality while fostering a positive team environment. The position is permanent, and offers all-year round employment. RESPONSIBILITIES • Lead and manage a kitchen team of 7 chefs, providing guidance and support to ensure efficient food production. • Develop and implement innovative menus that reflect current culinary trends while meeting customer preferences. • Supervise food preparation processes to maintain consistency and quality in every dish served. • Ensure compliance with food safety regulations and maintain a clean, organised kitchen environment. • Collaborate with restaurant management to optimise kitchen operations and enhance overall guest satisfaction. • Train and mentor kitchen staff, promoting professional development and teamwork within the culinary department. • Monitor inventory levels, placing orders for supplies as needed to ensure seamless kitchen operations. • Assist in budgeting and cost control measures to maximise profitability without compromising quality. Qualifications • Proven experience as a Head Chef or in a similar leadership role within a high-volume catering outlet, restaurant, or hospitality setting. • Strong knowledge of food safety standards and best practices in food production. • Excellent communication and supervisory skills with the ability to motivate and manage a diverse team effectively. • Exceptional culinary skills with a creative approach to menu development and presentation. • Ability to work under pressure in a fast-paced environment while maintaining attention to detail. • Strong organisational skills with the capability to manage multiple tasks simultaneously. • A genuine passion for hospitality and delivering outstanding dining experiences to guests.
