Job description:

Nestling in the foothills of the Trossachs on the shores of Loch Ard, the Macdonald Forest Hills Hotel & Spa is seeking a dynamic Head Chef to deliver the high quality food and service excellence expected from the Hotel.

This luxury hotel and spa is set in 25 acres of landscaped gardens and has 56 hotel rooms and 65 luxury lodges. Our AA rosette awarded Garden Restaurant offers a fabulous fine-dining menu while the relaxing atmosphere of our Bistro is perfect for a less formal dining experience.

As a Head Chef, you will have full responsibility for the kitchen and will report directly to the Resort General Manager. Key to this role will be the ability to manage a busy kitchen that is able to focus on both quality and quantity. You will be responsible for managing costs in the kitchen, in particular those around food GP and working within manning parameters. Maintaining a safe, clean and tidy kitchen in line with current legislation will also be key.

We are seeking a Head Chef who can combine a head for profitable business with a heart for creative cuisine and this is a position in which your talent will flourish.

As the inspirational driving force behind the kitchen's operations, you will be the brains behind everything from the creation of imaginative menus to the recruitment and training of staff.

The right candidate for the role of Head Chef will have excellent personal presentation, be passionate about food and be professional at all times having gained recent experience within a large 4* hotel or resort, preferably in the UK.

You may currently be looking for career progression to your first Head Chef role and we welcome candidates with different lengths of experience who can demonstrate that they have the experience we require.

Key responsibilities:
Support the Regional Executive Chef to deliver the product to core standard
Support the Regional Executive Chef to ensure effective cost controls are in place
Oversee stock take, ordering and delivery process as well as ensuring correct storage of food at all times
Oversee H&S aspects of the kitchen including statutory record requirements, ensuring food production is within safe working practices and food safety is maintained
Provide leadership to the team within the kitchen, ensuring the brigade are well trained, disciplined and able to deliver an excellent product day in day out.
Managing the human resource aspect of the kitchen including Departmental Inductions, Fast Forward reviews, Appraisals, Personal Development plans and Job chats
An awareness of the standards required in a rosette-awarded restaurant and a 4 star hotel would be beneficial.
