Salary:Salary of £44,000 paid monthly plus bonuses based on Gross Profit and Payroll percentages available of up to £6,000. £20,000 bonus paid on the hotel receiving a Bib Gourmand which is paid one year after receiving the award.
Hours:Contracted to 55 hours a week
Days:5 days a week
Holidays:Statutory (28 days p/a)
Covers:Lunch: Afternoon tea; Dinner: Up to 100; Breakfast: Up to 100 there is a breakfast chef; Functions: 150 weddings per year
Food type:2AA rosette using Scottish ingredients
Full-time chefs:11 plus kitchen porters
Job description:

I am recruiting for a 4* hotel situated 35 miles north-west of Glasgow which has 2 rosettes for the food. Looking for a head chef to lead and manage the team of this very busy operation.

You will be in control of the day-to-day running of the kitchen including health, safety and hygiene and all relevant paperwork, management and recruiting of the team, ordering, management of functions as well as being hands on in the kitchen.

Looking for a chef who has longevity and stability in their CV and who is looking to continue this in their career.

The hotel does 150 weddings a year and we would need someone who is capable of co-ordinating this although they do have a banqueting chef.

There are various menus including a la carte and market menu and would ideally like a chef who is experienced in cuisines from across the world as well as predominately Scottish cuisine.

Must be a driver due to the location of the establishment.

This position is available now and is a permanent all year round position.
