Job description: | This is a fantastic opportunity for an existing head chef or senior sous looking to make the next step into a business that they can really make their own mark on. The ideal candidate will be from a quality over quantity background and have the desire to take the business to the next level by imposing their own culinary creativity throughout the whole menu. One of our initial goals are to structure our menus around seasonality & the best Scottish produce available with a focus on Argyle & Bute, Perthshire & the Highland regions. Reporting directly to the Business & Operations Manager you will work closely together in sourcing only the finest quality ingredients and building seasonal menus which best reflect the wonderful larder on our doorstep. You will be the key decision maker in all menus and sourcing the best suppliers to assist you in achieving your own goals and ambitions. You will have opportunities to grow and develop produce from within the grounds and thinking outside the box is as vital to the business as the great tasting food you and your team create. You will be responsible for enhancing the team around you to assist you in meeting all KPI's and taking the business to the 5* Visit Scotland rating we are looking to achieve. As with all head chef roles you will be expected to follow and exceed all hygiene regulations and hold the relevant food safety certification. At the Ben Cruachan Inn we have 5 bedrooms and 5 self-catering apartments adjoining with planning permission in place to extend the accommodation side of the business. We can provide accommodation if required and have availability to provide partners with work in other areas of the business. |
