Who are we?
The Oxgang has been around for years and is in the centre of Grangemouth. A recent refurbishment has created a modern, fresh and upbeat environment. We have a following of loyal customers who we aim to put at the heart of everything we do. The Oxgang comprises of a Bar Restaurant and hotel.
Who are we looking for?
An experienced head chef or sous looking to step up, creative, organised who is enthusiastic & passionate about what they do. A hard working committed individual with attention to detail, who thrives in a busy business, with a real passion for food. A people person with good communication skills, who is comfortable costing and creating new menus and specials, who can work with and inspire their team to create a happy balance in the kitchen. It’s important that a learning culture is created in the kitchen, helping other team members to reach their full potential.
Responsibilities of the role
• Creativity that helps to grow the business, new fresh ideas following key trends in the hospitality industry.
• The Head Chefs responsible for overall running of the kitchen, managing of the kitchen team to meet performance and staffing targets.
• Create menus and specials in conjunction with the directors and managers, including fully costing each dish to ensure it consistently hits margin.
• Monitor suppliers and deliveries to ensure they are always at the agreed prices, making sure stock levels are consistent with demand. Keeping wastage and stock levels to agreed limits.
• Provide takings on target, wage spend on target to hit quarterly forecast & targets.
• Ensuring consistency with the dishes leaving the kitchen, so our customers are consistently receiving good quality food and that wait times are held at an agreed standard.
• Ensure food hygiene including full Cooksafe paperwork is maintained and up to date
• Committed to developing yourself and your team and keeping abreast of industry standards and key changes.
• Being IT literate to ensure all back-office management is carried out efficiently and always up to date.

Hours of work
Due to the nature of the business the successful head chef candidate must be flexible in terms of hours which will include weekend work.
