One of Scotland’s finest 5-star hotels, we are seeking creative, passionate, and enthusiastic Fine Dining, Jr Sous Chef to join our 3 rosette Sandemans team.
Sandemans is open Tuesday to Saturday and only provides evening service.
Our stunning fine dining restaurant, Sandemans, is a 26 cover, with more than a touch of theatrical magic, classical Scottish fine dining restaurant with a real sense of romance.
Our exceptional dishes created from Scotland’s finest produce, offering unrivalled experience for fine dining Chefs looking to grow and develop, both professionally and personally.

When Fonab first opened its doors in 2013, we had 24 bedrooms. Today this magnificent Castle has 42 bedrooms and has grown from strength to strength and recently undertaken a 3 million pound development, including a new look to our fine dining restaurant Sandemans and our main Brasserie restaurant.
Today, as a member of the Luxury Scotland, Fonab continues to offer an unrivalled array of attractions, including luxury accommodation, some of the best dining experiences in Scotland, spa and an exhilarating array of outdoor activities.
Location; Pitlochry, just off the A9. Fonab is also within easy reach of several Scottish towns and cities: Edinburgh City Centre (1hr), Glasgow or Dundee (1hr), Perth (20mins). Pitlochry also has a main trainline on the Main East Coast Line.

• You’ll be learning from the best in the industry; our senior chefs have also held accomplished positions in some of the best restaurants in the UK and around the world, including Michelin star level
• Playing a key part in creating the most exceptional fine dining experience in our fantastic, and modern kitchen
• Working with the best Scottish ingredients using both classic and modern cooking techniques
• Bringing delicious flavours to our guests’ tables, running your own section in our busy, fast paced and inspiring kitchen
• You’ll be crucial to making sure our operation runs without hitch, orders and deliveries are coming and going as needed, our service is slick and our food hygiene standards are sky-high
• Supporting our Executive Chef on ideas and techniques that make our kitchen a creative, ever-changing environment where we’re always looking to come up with new, delicious combinations of taste
• Nurturing and developing the talent of the kitchen team, creating an environment that brings out the best in them and where they can be themselves
The kind of person we're looking for:
• Previous experience at a similar level working as part of a fast-moving, quality driven Culinary team
• Your passion for food is a given; you’ll want to continue to grow your experience within a 3 rosette, quality driven environment
• You're highly motivated and possess an immense sense of pride in your work; you're passionate about delivering the high standards for our guests
• You have a positive “can do” attitude to solving problems in a professional and courteous manner
• Excellent personal presentation, hygiene and grooming standards are all second nature to you
• You're a strong team player with great communication skills and an enthusiastic approach; you're well organised and punctual with an eagle eye for detail
• You want to be part of a team that works hard, supports each other and above all has fun along the way
What’s in it for you:
• The on target earning potential for this role is £30,000 / annual salary, compromising of a base salary of £26,000 plus a qualified estimate of £4,000 gratuities per annum
• Our culinary colleagues are contracted to 46 hours per week
• Overtime is paid at your hourly rate should you be required to work more than your contracted hours
• 28 days holiday (including bank holidays) that increases with service
