Job description: | The University of Strathclyde seeks to appoint an experienced and energetic Sous Chef who can lead one of the food production teams based at Ross Priory in Gartocharn on Loch Lomond, G83 8NL. Ross Priory is the university’s country house and members club and also offers commercial catering to conferences, weddings and events throughout the year. You will be expected to deputise for the Head Chef when necessary and oversee the team to consistently deliver food which is nutritious, high quality and offers value for money. You will be responsible for the compliance of the food production, cook safe policy and health and safety, food hygiene and COSHH regulations. You will assist the head chef with the menu development for Ross Priory with seasonal produce and take ownership of the consistency of delivery of a good variety of fresh, high quality food which offers value for money and meets the needs of our members, clients, conference delegates and visitors. This requires to be delivered in a profitable and effective environment, and as such you will take responsibility for achieving set stock and GP targets and within the set labour budget for your kitchen. Normal hours for this position are 35 and a flexible approach to a varied work pattern of 5 days over 7, including evenings and weekends, is essential (A non-standard working allowance of 5% is applicable). Shifts will vary to meet bookings, conference and events business requirements. An enhanced rate of pay will be applied for hours worked over 35 per week. |
