Hours:working 45 hours per week during the summer season and 40 hours per week in the winter, over 5 days. We also pay overtime hours during the main season (April to October) and may give time off in lieu for any additional hours worked during quieter winter months. We can also consider applicants from those who live locally and are looking for part-time hours.
Days:5 days a week - 2 days off together
Holidays:Statutory (28 days p/a)
Covers:Lunch: up to 30; Dinner: up to 70; Breakfast: up to 80; Functions: Golfing Events / Wedding
Food type:Scottish seasonal a la carte and bar menu using lots of fresh seafood / steaks / wild meats and foraging
Full-time chefs:8 plus kitchen porters
Accommodation:If you would be relocating to live on Islay we offer staff accommodation within a 10 min walk of the hotel or if you have a car can live in a shared house, 15 min drive away. We ask for an accommodation contribution of £52.85 per week (£7.55 per day)
Job description:

We are looking for a permanent Chef de Partie (ideally with rosette experience)

With panoramic views across the golf links and the stunning ocean sun sets, Restaurant 18 and our Stag lounge are true jewels in the crown here at The Machrie.

Working in a small passionate team cooking food from fresh you will support our new Executive Chef in creating a legacy at The Machrie for our food. Linking with local island and coastal suppliers we have focused on celebrating the best of Scottish coastal provenance from land and sea to take centre stage for our hotel guests, golf members and island locals. We have aspirations to be working towards gaining one AA Rosette this year and on to 2 Rosettes next year. We wouldn’t go beyond this those as we want to offer ‘casual fine dining’.

Having gained good basic skills you will be ready now to suggest ideas and get involved in putting The Machrie on the map for not just it's golf links, but also our food!

As Chef De Partie your role will be to support by leading your shift and delivering the day-to-day performance of your section.

You will be responsible for the quality of the mise en place and performance of any Apprentice or Commis Chefs working on the section.
Responsible for food storage and preparation, service cleardown, completion of daily HACCP checks and due diligence records. Organising the daily workload, delegating tasks and consistently producing food to recipe and agreed presentation standards.

You will also provide support, guidance and training to the junior members of the team along with controlling stock and recording wastage.
What we require:

Current or recent experience as Demi Chef De Partie or Chef De Partie, in a quality hotel or restaurant.

Applicants will be passionate about food and have keen attention to detail, the ability to quickly build excellent working relationships and have a flexible approach to work.
