Job description:

There are 3 things that differentiate the Kylesku Hotel:

1) Dedication to sourcing the best ultra-local ingredients and showcasing these in a creative and original way. We specialise in local fish and seafood- with much of the latter often being landed on the slipway outside the hotel. We also work very closely with local Crofters, (often from within a 25 mile radius) who supply us with rare breed meats, salads and vegetables.

2) Our ethos! Not only are we driven to continually source our ingredients in the most responsible and sustainable way, but we believe passionately in our industry and what is has to offer. We are determined to ensure our business has leading pay and working conditions- with a good work/life balance and a fun and respectful environment. In short, we value our team as much as our guests. 3) Our location. We are situated a 2 hour drive NW of Inverness and are right in the heart of the Highland Wilderness. Wildlife, scenery and great walks are on our doorstep- however, our location will not suit some! We are 10 miles from the nearest shop and a 40 minute drive from Ullapool with its shops, bars and restaurants.

We were awarded 2018 “National Informal Dining Restaurant” from the Scottish Hotel awards and have a rising reputation across the country.

Whilst the hotel itself only has 11 bedrooms, don’t be fooled. We serve a gastro-style menu- with our specials changing daily, and aim to serve around 150-200 covers a day at the height of the season.

We are looking for a CdP to join our team from early April to late November. If you have experience, great- however, attitude and a willingness to learn are vastly more important to us and we have trained many of our chefs from scratch.

Our ideal chef will be a highly motivated self-starter, with resilience, stamina and a great attention to detail. They will have a genuine passion for food and a desire to please the diner. A level-headed person, able to form great working relationships at all levels and to work under pressure.

You will be expected to work as part of a highly performing team, covering all aspects of the role, from creating specials to helping with the washing up!

Key elements include stock control, compliance with due diligence and food safety procedures.

We are primarily recruiting for the 2019 season, but permanent positions for the right candidates are an option.
