Job description: | Exciting opportunity in South West Scotland for an experienced Head Chef The Cairndale Hotel is a traditional privately owned hotel situated close to the centre of Dumfries in South West Scotland. With a hotel of 91 letting bedrooms the hotel is one of the largest in the area and offers a wide range of facilities including leisure club and functions facilities for up to 250/300 guests. The successful candidate with have a number of years' experience working in a similar establishment and have a proven track record having worked in a busy 3 / 4 star operation or quality restaurant. Our head chef will need to be hands on and lead the front and build a strongly motivated team in the kitchen. Responsible for menu planning/costing, GP and wage costs out head chef will also be required to uphold health and safety standards and fully conversant with HACCP/Cook Safe. At present the hotel offers both A la Carte an Table d'Hote menu and caters for a wide range of guests including both corporate and leisure guests. During the busy summer season we welcome a large number of golf groups to the hotel as well as other guests who come to Dumfries and Galloway to visit the many castles, gardens and stately homes in the area or take part in outdoor activities like mountain biking and walking. Over the winter months the hotel caters for an increasing number of private functions and arranges tribute weekends that are well established events in the hotel. Residential Christmas, New Year and Christmas party nights are followed by Burns Suppers in January. This is an exciting time to be joining the hotel as we look to further develop the hotel and look to open a new restaurant concept later in the year.
